The cultivar (i.e. the type of olive) of our olive trees is the Tonda Iblea , native of the Iblei Mountains, which finds its ideal environment and maximum expression here.

Tonda Iblea is a cultivar that is very resistant to the cold temperatures that are frequent here in winter: consequently it is rather difficult for olive fly attacks to occur, making it possible not to resort to pesticides.

The degree of ripeness of the olives at harvest is at the beginning of veraison, which allows to obtain a good balance in the oil between the fruity/herbaceous notes, the spiciness and the bitterness, even at the expense of the production quantity to favor the quality.

Tondo oil is filtered before storage: why?

Filtration using cellulose cardboard filters is essential for stabilization over time and for the quality of the product.

In fact, filtration:

• reduce the free water content in order to prevent the degradation action of microorganisms.
• eliminates mesophilic biotic agents (aerobes, anaerobes and facultative anaerobes) naturally present in olives.
• This guarantees that the oil maintains its health and organoleptic qualities over time.
